Maple Roasted Carrots
I can't get over how beautiful and bright these rainbow carrots are. When I saw them in the store I had to get them and decided to roast them in maple syrup as a side dish last night.
This is a one pot dish that is made with extremely simple ingredients. Some carrots, maple syrup, salt and pepper is all you need to make an extremely flavorful and quick side dish.
This would make a stunning side dish for your holiday meal. Try to find the rainbow carrots if you can because your guests will be awed by how beautiful they look on the table. I can't wait for you to try this!
Maple Roasted Carrots:

1 pound carrots, peeled and chopped
1 tablespoon extra virgin olive oil
1 tablespoon maple syrup
1/4 teaspoon salt
1/4 teaspoon pepper
- Preheat the oven to 375°.
- Heat the olive oil in a saute pan and add the carrots. Saute for about 7-10 minutes until the carrots start to brown and get tender. Add the maple syrup, salt and pepper and transfer the pan to the oven.
- Bake for 15 minutes, until the carrots are tender and serve.
