Three Kinds of Mini Pizzas: Margarita, Buffalo Chicken and BBQ chicken



I went home for the weekend with my boyfriend and I had to take advantage of the pizza stone we have at my parents' house.

My boyfriend and I decided to have a pizza night and make 3 different kinds of pizza. He loves barbecue chicken pizza so that was an obvious choice, and we both also love margarita and buffalo chicken pizza.


Each of these pizzas only require a few ingredients to make. The ingredients are simple, but the flavors are bold and unique. 


Since it was only the two of us at my house we only used one whole wheat pizza dough and separated it into 3 pieces. If you are having a pizza party, you should definitely use 3 whole pizza doughs and double the recommended amounts of toppings.


The next time you're planning on having a pizza night, these 3 pizza flavors will satisfy a variety of taste buds. Your guests or family will be amazed by the delicious variety you provided them and there is no way the night won't be a success, enjoy!

Three Kinds of Pizza:
  1. If you have a pizza stone: Preheat the oven to 500°. Put the stone in the oven to get very hot. Sprinkle some cornmeal on a the surface of a pizza paddle. 
  2. If you don't have a pizza stone: Preheat the oven to 450°. Sprinkle some cornmeal onto a baking sheet.

Margarita:

1/3 whole wheat pizza dough (I used Trader Joe's)
1 plum tomato, sliced
2 basil leaves, torn
2 tablespoons olive oil
2 small garlic cloves, minced
1 ball burrata cheese, diced
  1. Roll the pizza dough out into a thin circle on a floured surface.
  2. Combine the garlic and olive oil in a small bowl and brush onto the surface of the dough, leaving a small border around the edge for the crust.
  3. Top with the burrata cheese, tomatoes and basil leaves.
  4. Either transfer to the pizza paddle and transfer to the pizza stone or put onto the baking sheet. Bake for about 8-10 minutes, until golden brown and crispy.
Buffalo Chicken:

1/3 whole wheat pizza dough
1 boneless skinless chicken breast, diced
3 tablespoons buffalo sauce
1/4 cup blue cheese, crumbled
1/4 red pepper, diced
2 baby bella mushrooms, sliced thin
salt and pepper
  1. Roll the pizza dough out into a thin circle on a floured surface.
  2. Spread 1 tablespoon of buffalo sauce onto the surface of the dough, leaving a small border for the crust.
  3. Spray a small skillet with non-stick cooking spray and add the diced chicken. Season with salt and pepper. Once cooked through, stir in 2 tablespoons of buffalo sauce and cook for about 3-5 more minutes. Remove the chicken from the pan and set aside.
  4. To the dough add the diced red pepper and mushrooms. Then add the diced chicken (you may have some leftover). Top with the blue cheese and either transfer to the pizza stone or baking sheet.
  5. Bake for 8-10 minutes, until browned and crisp.

Barbecue Chicken:


1/3 whole wheat pizza dough
1 boneless skinless chicken breast, diced
3 tablespoons barbecue sauce
1/4 cup mozzarella cheese, shredded
1/4 cup sharp cheddar cheese, shredded
1/4 cup red onion, sliced thin
salt and pepper
  1. Roll the pizza dough out into a thin circle on a floured surface.
  2. Spread 1 tablespoon of barbecue sauce onto the surface of the dough, leaving a small border for the crust.
  3. Spray a small skillet with non-stick cooking spray and add the diced chicken. Season with salt and pepper. Once cooked through, stir in 2 tablespoons of barbecue sauce and cook for about 3-5 more minutes. Remove the chicken from the pan and set aside.
  4. To the dough add 2 cheeses and diced onion. Then add the diced chicken (you may have some leftover). Transfer to the pizza stone or baking sheet.
  5. Bake for 8-10 minutes, until browned and crisp.
