Skillet Gnocchi with White Beans and Spinach
This is one of my quick go to dinners that has all the components of a well balanced and healthy meal. The starch comes from the potato gnocchi, the protein from the beans and all of the vitamins and minerals from the tomatoes and spinach make this meal very filling and flavorful.
I love making this meal at school because not only do my roommate and boyfriend love it, but it takes only 20 minutes to make. When I have a lot of schoolwork or have to study for a test, this meal is one of the first that comes to mind.
This dish is also great because you can keep most of the ingredients on hand. The beans, tomatoes and gnocchi can be kept in the pantry and I usually always have mozzarella and spinach in my fridge.
This is definitely a dinner you have to try and I'm sure it will be a new family favorite!
Skillet Gnocchi with White Beans and Spinach:

1 tablespoon plus 1 teaspoon olive oil
1 16 ounce package gnocchi
1 small yellow onion, diced small
3 garlic cloves, minced
1/2 cup water
4 cups spinach
1 15 ounce can Italian seasoned diced tomatoes
1 15 ounce can white beans, rinsed
1/4 teaspoon freshly ground pepper
1/2 cup shredded part skim mozzarella cheese
1/4 cup parmesan cheese, grated
- Heat 1 tablespoon olive oil in a large skillet over medium high heat. Saute the gnocchi for about 7 minutes. Once tender, transfer the gnocchi to a bowl.
- Heat the remaining 1 teaspoon of olive oil in the same skillet. Add the onion and saute for about 5 minutes. Add in the garlic and 1/2 cup water and saute until the onion is tender, about 5 more minutes.
- Add the spinach and cook until it starts to wilt. Stir in the tomatoes, beans and pepper. Then, stir in the gnocchi and sprinkle with the mozzarella and parmesan cheese. Stir until the cheese has melted, about 3 minutes.
