Cinnamon Roll Baked Oatmeal with Cream Cheese Icing
I was looking through some of my old recipes that I have made in the past and came across this recipe. I forgot how delicious this baked oatmeal was for breakfast and I may have to go to the store tomorrow to get the ingredients to make it this weekend.
Cinnamon rolls and icing are extremely sweet and delicious, but full of sugar and empty calories. This baked cinnamon oatmeal topped with a small amount of cream cheese frosting provides the sweetness you want in a cinnamon roll, but without all of the guilt that can follow eating one.
This recipe is so easy and simple to make for a quick and nutritious breakfast. Eat with a bowl of fruit and you have a perfect well balanced way to start your day!
Cream Cheese Icing:
1 tablespoon cream cheese
2 tablespoons powdered sugar
1 teaspoon almond milk
- Whisk all of the ingredients in a small bowl and set aside.
Cinnamon Roll Baked Oatmeal:

1/2 cup old fashioned oats
1/4 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 stevia packet (or 1 1/2 tablespoons maple syrup)
1/4 cup unsweetened applesauce
1/4 cup almond milk
1/16th teaspoon salt
- Preheat the oven to 375°.
- Combine all of the ingredients in a medium bowl. Pour into a small ramekin and bake for 18-20 minutes. Put under the broiler for another 2 minutes to get a crust on the oatmeal.
- Remove the oatmeal from the ramekin and transfer to a plate. Top with the cream cheese icing and enjoy!
