Sugar and Oil Free Plumcot Buckle



I was in the baking mood today and I had a big bag of plumcots that I had bought at Trader Joe's that I needed to use up somehow. I decided they would be great in a buckle, but there are not any plumcot buckle recipes out there haha.

I found a blueberry buckle recipe and tweeked it to make it sugar and oil free. Replacing oil with applesauce and sugar with stevia, it is easier than you make think to make a decadent treat healthy.

If you do not have plumcots on hand, you can easily replace them with any type of fruit you want. Blueberries, raspberries, plums or any other of your favorite fruits will taste great with the base buckle recipe.

You can enjoy this buckle for breakfast, a snack or a dessert. It is delicious and a must try! 



Sugar and Oil Free Plumcot Buckle:

Cake Ingredients:
1 cup white whole wheat flour
1 cup all purpose flour
2 teaspoons baking powder
3/4 cup honey
1/3 cup applesauce
2 teaspoons vanilla extract
1/2 teaspoon salt
4 plumcots (or 3 cups other fruit)

Streusel Ingredients:
3/4 cup white whole wheat flour
4 stevia packets 
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
4 tablespoons applesauce
  1. Preheat the oven to 350°. Grease a baking pan and set aside.
  2. For the cake: mix the two flours and baking powder together in a large bowl. In a separate bowl whisk together the honey, applesauce, vanilla extract and salt. Pour the wet ingredients into the dry and combine. Fold in the plumcots.
  3. Spread the batter into the prepared pan.
  4. To make the streusel: combine the flour, stevia, cinnamon, baking powder and salt in a bowl. Stir in the applesauce until the mixture is crumbly. Top the cake with the streusel. Bake for 30-40 minutes until cooked through. Let cool and cut into squares.
