Microwave Breakfast Pumpkin Cake with Peanut Butter Greek Yogurt Topping



I usually wake up starving and craving breakfast food. I always need something I can make fast, but that will be hearty and keep me full throughout the morning.


This fast and easy microwave pumpkin spice cake is the perfect fall breakfast that definitely kept me full all morning long.


This little cake has a subtle sweetness from pumpkin and applesauce, and some spice from a pumpkin pie spice blend. I also needed to get my morning protein and decided to top the cake with a dollop of greek yogurt that I mixed some natural peanut butter into.


The combination of all the great flavors that make up this breakfast cake will leave you wanting it every morning thereafter. 

Microwave Breakfast Pumpkin Cake with Peanut Butter Greek Yogurt Topping:

3 tablespoons white whole wheat flour
3 tablespoons almond meal
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
1 tablespoon brown sugar
1 stevia packet
2 tablespoons almond milk
2 teaspoons applesauce
4 teaspoons pumpkin puree
1/2 teaspoon vanilla extract
1/4 cup plain greek yogurt
2 teaspoons creamy peanut butter
  1. Combine all of the ingredients other than the greek yogurt and peanut butter in a small bowl.
  2. Transfer to a mug or ramekin and place in the microwave for about 1 minute 30 seconds. If the cake is not cooked through after this time, place it in the microwave for 10 second increments until it cooks through.
  3. Mix together the greek yogurt and peanut butter and top the cake with the greek yogurt mixture.
  4. Enjoy!
