Peanut Butter, Banana and Blueberry Oatmeal

I am posting yet another breakfast item, but breakfast is the most important meal of the day (and my favorite meal of the day). I love having anything with peanut butter for breakfast and this oatmeal definitely fixes my peanut butter cravings I sometimes wake up with.

This oatmeal tastes indulgent from the rich peanut butter and thick, chewy oats, but it is such a healthy way to start your day. Full of protein from the peanut butter, potassium from the banana and vitamins from the blueberries, you'll feel great for the rest of the day after eating this.

It takes almost no time to make this in the morning and it will keep you full for hours. This oatmeal recipe is definitely a keeper!

Peanut Butter, Banana and Blueberry Oatmeal:
(original recipe from: http://chocolatecoveredkatie.com)

1/2 cup rolled oats
1 cup almond milk
1/4 teaspoon salt
1/2 banana
1 tablespoon peanut butter
1/4 teaspoon vanilla extract
1/4 cup blueberries
  1. Combine the oats, milk and salt in a small saucepan and bring to a boil. Once boiling, reduce to a simmer and cook for about 5 minutes.
  2. In a blender combine the peanut butter, banana and vanilla. Add half of the oats to the blender and blend until well combined. Transfer to a bowl and stir in the other half of the oats. Top with blueberries and enjoy!
