Spiced Chicken over Baked Sweet Potato with Kale
I love spicy food and this simple to prepare lunch or dinner definitely satisfies my cravings for spice. The chicken is prepared with a basic spice mix and the whole meal is topped off with the extra spice of sriracha.
Sweet potatoes are so versatile with regards to what you can top them with. They are loaded with vitamins and have so much more flavor than a russet potato. I chose to top this sweet potato with crunchy kale and of course spicy chicken.

Spiced Chicken over Baked Sweet Potato with Kale
1 sweet potato
1 cup cooked, shredded chicken
1 cup kale, torn
1/4 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/2 teaspoon cumin
1/8 teaspoon cayenne
1 tablespoon sriracha
- Wash the sweet potato and poke holes with a fork all over the surface. Place in the microwave and cook on high for 4-5 minutes, until the potato is fork tender.
- Combine the paprika, salt, garlic powder, cumin and cayenne in a small bowl.
- Spray a small skillet with coconut oil spray. Over medium heat, add the kale and cook until wilted, about 4 minutes. Remove the kale from the skillet and add the chicken to the same skillet.
- Add the spice mix to the chicken and continue to cook. Cook for about 4 minutes, until the chicken is heated through.
- Cut the sweet potato open and top with the kale and chicken. Top the whole thing with sriracha and enjoy!
