Apple Raisin Bread with An Oatmeal Streusel Topping


My boyfriend likes to eat homemade breads for breakfast in the morning, so I decided to be a nice girlfriend and bake him one today.


Homemade quick breads are not only delicious, but also convenient to have on hand. They are so easy to make and will last the entire week.


This quick bread is loaded with fresh crisp apples and chewy raisins. I decided to top it with a simple mixture of oats, butter, brown sugar and cinnamon. All of the ingredients make this bread sweet and moist with a crunch from the topping.


I will definitely be making this bread again. It's a great recipe that is easy to make and even easier to devour!

Apple Raisin Bread with An Oatmeal Streusel Topping:

1 cup plain non fat Greek yogurt
3/4 cup granulated sugar
2 eggs
1 tablespoon vanilla extract
1 cup whole wheat pastry flour
1 cup all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raisins
2 medium apples, peeled and chopped
1/2 teaspoon lemon juice
1/2 tablespoon sugar
1/2 tablespoon cinnamon

Oatmeal Streusel Topping:

1 tablespoon butter, melted
1 tablespoon oats
1 tablespoon brown sugar
1/2 tablespoon cinnamon
  1. Preheat the oven to 350°. Spray a loaf pan with non-stick cooking spray.
  2. In a small bowl combine the chopped apples, lemon juice, 1/2 tablespoon sugar and cinnamon.
  3. In a large bowl beat together the yogurt, 3/4 cup sugar, eggs and vanilla.
  4. In a separate bowl combine the 2 flours, baking powder, baking soda and salt.
  5. Add the flour mixture to the wet ingredients and beat until well combined.
  6. Stir in the apples and raisins. Transfer to the loaf pan.
  7. In a small bowl combine the topping ingredients and evenly distribute over the top of the bread.
  8. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean. Transfer to a cooling rack and allow to completely cool before cutting.
