Chicken Pesto Phyllo Cups
It doesn't get much more delicious than the simple but intense flavors of pesto and phyllo dough cups. I had never worked with phyllo dough before and I decided to try to make my own phyllo cups. I would definitely suggest to buy phyllo cups already made because making your own can get a little messy and complicated.
I made these little cups of deliciousness for game day on Sunday. They were gone by lunchtime the next day. They were definitely a favorite and I can't wait to make them again.
You will absolutely love these phyllo cups with pesto chicken. They are a great little hand held appetizer and they will be great to serve at holiday parties this season. Just make sure you give them to your guests with napkins or else you'll be sweeping a lot of flaky phyllo dough off of your floor.
Chicken Pesto Phyllo Cups:

2 chicken breasts, cooked and chopped
2 tablespoons pesto
1 tablespoon mayonnaise
1 tablespoon parmesan cheese, grated
12 phyllo cups
- Preheat the oven to 375°.
- Combine the chicken, pesto, mayonnaise and parmesan in a bowl.
- Place the phyllo cups onto a baking sheet and fill each one with the chicken pesto mixture. Bake for about 8 minutes until heated through.
