Individual Banana Pudding Breakfast Cake
One of my favorite ways to enjoy breakfast is in the form of a healthy cake. The title of this cake may sound like it should be a dessert, but it is definitely healthy enough to enjoy for breakfast.
Made with an entire banana, almond milk and stevia, this little cake is very nutritious. After taking picture of it, I topped it with a dollop of Greek yogurt that had some peanut butter mixed into it. You can't beat the combination of peanut butter and banana.
You can choose to enjoy this easy cake for breakfast, as a snack or as a dessert. I chose to make this a breakfast cake because it is a great way to start off a day.
I hope you enjoy this cake. The banana keeps it moist on the inside and it is definitely best served warm. Topping it with Greek yogurt adds a great tang and some extra protein. Overall, this is delicious and you have to try it!
Individual Banana Pudding Breakfast Cake:

1 ripe banana, mashed
1 egg, beaten
1 tablespoon white whole wheat flour
2 stevia packets
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
1/8 teaspoon salt
1/4 teaspoon nutmeg
2 tablespoons almond milk
- Preheat the oven to 350°.
- Combine all of the ingredients in a bowl and transfer to a ramekin. Bake for 30 minutes and serve warm. Top with some peanut butter or Greek yogurt if desired.
