Single Serving Gluten Free Chocolate Lava Cake


I've been trying to eat less gluten and sugar lately, and this chocolate lava cake is one of the tastiest ways for me to do that! It is extremely easy to make and is perfect topped with some frozen vanilla Greek yogurt or coconut cream (yum!).


The ingredients in this lava cake are simple and even nutritious. You will get protein from Greek yogurt, almond meal and eggs and you will get some wonderful antioxidants from decadent dark chocolate (my personal favorite way to get my antioxidants).

I highly recommend you try out this recipe. I was in the mood for a chocolate cake the other night and quickly baked this one. It was ready just in time to fix my craving and it is delicious. Enjoy!


Single Serving Gluten Free Chocolate Lava Cake:

2 ounces dark chocolate, melted
1 tablespoon plain Greek yogurt
1 1/2 tablespoons coconut sugar
1 egg
1/4 teaspoon vanilla extract
1/16 teaspoon salt
1 1/2 tablespoons almond flour (I used Bob's Red Mill)
  1. Preheat the oven to 400° and lightly grease a ramekin or muffin tin.
  2. Melt the chocolate in the microwave at 30 second intervals, stirring after each 30 seconds until melted. Let cool slightly.
  3. In a medium bowl beat the Greek yogurt and coconut sugar together until combined. Next, add the egg to the mixture and beat until smooth.
  4. Stir in the vanilla, salt and almond flour until combined. Fold in the melted chocolate until fully incorporated. Transfer the batter to the ramekin and bake for 10-15 minutes, until the cake reaches the consistency you prefer. Top with some vanilla ice cream, frozen Greek yogurt or coconut cream and enjoy!
